Jelly Magic


Different colour jelly ( I use blueberry & orange jelly, u can As many colour u like)
( prepare according to packet instructions) keep it in the fridge.

Milk 2 cups
Cream 1/2 cup
Sugar 2-3tbs
Gelatine or agar agar 11/2 tbs

Once jelly set in the fridge boil milk & cream together. Switch off the heat and add gelatine & sugar. Mix throughly until all the gelatine dissolve in the milk. Keep it aside to cool. While take out the jelly , cut into small pieces and put it in the desired shape container. Then add the cooled milk mix to the jelly and again put it back to the fridge to set the milk jelly mix. Once it’s done, take out from the fridge & cut it into the desired shape & serve it. Kids will love this colour full treat. Enjoy…..!

Vegetable Bacon Salad

Vegetable Bacon Salad

Broccoli 1 ( Cook for 2 mts in the boiling water & take off from the heat, strain and add cold water straight to keep the freshness of the broccoli)
Carrot 1 peel & thinly sliced
Olives few green& black
Jalapeño few
Lettuce sliced 1 cup
Onion 1 sliced
Bacon 4 sliced
Lemon 1
Put some oil in a nonstick pan & cook the bacon until slightly brown & crispy

Put all the vegetables in a salad bowl & add bacon . Then squeeze the lemon juice and mix well & serve it. Enjoy your healthy salad.

Chicken Stew

Chicken 1/2 kg medium sliced
Onion 2 cut in to m. Square pieces
Potato 2 cut in to square pieces
Carrot 2 cut into square pieces
Coconut cream 1 bottle( mummy using fresh coconut milk)
Bay leaves 4-5
Cinnamon stick 3×1 inch pieces
Cardamom 5
Gloves 5-6
Whole black pepper 2 tsp
Curry leaves
Black pepper powder
Cashew nut paste 1 tbs
Ginger garlic paste 1 tbs
Heat the oil in a nonstick pan add all the spices cinnamon first and all other spices, sauté for a mts then add ginger garlic paste & curry leaves. When ginger garlic paste stared to become brown add onion & salt sauté for few mts( until become translucent not brown)
Then add chicken pieces& sauté for another few mts. Now add 1/2 bottle coconut cream, water & potato. Reduce the heat to medium flame & allow to cook potato & chicken. While potato 1/2 cooked add carrot. Once chicken potato & carrot done the rest of the coconut cream and cook another few mts. Then finally add cashew nut paste and stir for a mts so. Sprinkle the black pepper powder and switch of the flame. Enjoy your chicken stew with pallappam or kallappam.

Plum Cake/Fruit Cake

Plum Cake/Fruit Cake


1 cup self raising flour
1/2 cup chopped cashew nuts
1 cup mixed dry fruits (raisins, tutti fruiti,cherries)socked in the rum or wine at least for a week.
Oranges zest 2 tsp
1 + .5 cups white sugar
2/3 cup butter, at room temperature
3 eggs
1 clove + 1 cardamom pod + small piece of cinnamon + a pinch nutmeg (pound together to powder)
1 tsp vanilla essence
1/4 cup caramel syrup
3-4 Tbs wine or rum optional

Take out the dried fruits from wine and add enough flour to toss the fruits nicely & keep it aside
Pre-heat oven to 350F / 180C.

Mix the remaining flour and spices,

Beat the butter and 1 cup sugar until fluffy
Add vanilla and mix until combined.
Next, add 1 egg and beat. Then add a bit of the flour mixture and fold. Likewise, alternate between the eggs and flour mixture then
Add the cooled caramel and dredged fruits & orange zest and gently fold in. Pour batter into a greased cake pan and smooth the top.

Bake for 50-55 mins until it’s done or when a skewer inserted into the cake comes out clean.

Take out from the oven and add extra rum or wine on top while it’s hot ( this step is purely optional)
Dust with icing sugar when the cake is completely cooled.

Chicken Roast

Chicken Roast

Chicken no. 16 sliced & cleaned
Turmeric powder 1 tsp
Chilly powder 1-2 tbs
Ginger garlic paste 11/2 tbs
Curry leaves
1/2 lemon juice or 1 tbs vinegar
Mix all together & keep it in the fridge for at least 2 hours is good (if you have time)

Fry this marinated chicken in the oil and drain the extra oil using kitchen towel & keep it aside.

In second part you need

3 onion sliced
3 tomato sliced
Ginger garlic paste
Curry leaves
Green chilly
Chilly powder 1 tbs
Coriander powder 11/2 tbs
Garam masala 2 tsp
Coconut cream 1/4 cup

Take oil in a frying pan and add onion & Ginger garlic paste, green chilly & salt,cook onion until its translucent, then add chilly powder & coriander powder, sauté for a mt. ( if you like more spicy adjust the amount of chilly powder).Add tomato and cook until it’s done. Then add garam masala (pepper powder optional) and fried chicken. Sauté well until chicken coated nicely with masala. Put flame on low medium heat and add coconut cream and leave the flame on until you get a thick gravy chicken roast. Stir in between. Serve it with chapati or naan or parotta. Enjoy…!

Best Coffee Cake

Coffee cake
300 gm caster sugar
300gm butter or margarine
6 eggs
300gm self raising flour
2 tsp baking powder
2 tbsp hot water
2 tbsp instant coffee (add more if you like it strong)

Preheat the oven at 180c. Sieve the flour and baking powder twice together and keep it aside.
Add the sugar and the butter to a bowl and whisk until very fluffy and a pale cream.
Wisk the eggs in a mug and then add them gradually to the mixture with 1 tbsp of flour each time. don’t use all the flour.
Add the rest of the flour to the mixture and fold it in gently.
Dissolve the coffee in the boiling water and add to the mixture still folding.
Bake this in to 2 small pans or one big pan for 30-40 mts until it’s done in the pre heated oven. Enjoy…! Coffee cake recipe

Fresh Fruit Salad

Fresh tropical fruit salad

You can any fruit of your choices

How I made is

2 kiwi fruit
1 banana
1 Apple
5 strawberry sliced into 4
Grapes green and black cut into half
1 orange

Slice all the fruits into almost same sizes
Add one lemon juice & 2 Tbs sugar( optional)
Mix nicely. Your yummy fresh fruit salad is ready. Enjoy.
