Kappa Biryani (Tapioca Biryani)

Today’s recipe is a very popular South Indian especially Kerala famous

KAPPA BIRIYANI (tapioca biriyani restaurant style)

1:- Kappa (tapioca)fresh or frozen sliced 2 kg
Salt to taste
Turmeric powder 1 tsp
Water

Cook all these together until tapioca done, drain the water & keep it aside

2:- beef brisket sliced 11/2- 2 kg
Turmeric powder 1/2 tsp
Coriander powder 11/2 tbs
Meat masala 1 tbs
Salt to taste
Chilly powder according to your taste
Oil 2 tbs
Turn on the heat, take a cooker,add oil , then add all the powders , sauté for a mt, then add the brisket & salt , mix well , cover the cooker with weight on, then wait for 5 whistles and remove from the heat& keep it aside.

3:- onion sliced 2
Curry leaves
Green chilly 3-4
Oil

Turn on the heat , put some oil then add onion, green chilly & curry leaves, sauté well until onion become translucent, then add cooked beef mix & sauté for few mts, then add cooked kappa or tapioca, mix throughly , garnish it with some curry leaves or coriander leaves. Mango Lassi

it’s a most popular indian drink

It’s very delicious, yummy & refreshing drink especially during summer time.

You need

2 cup mango pulp( sweetened)
1 cup yogurt
1/2 cup milk
Sugar (optional)
Cardamom 1 (optional)
Blend all together, chill & serve.

Try this & enjoy.

Chocolate Marble Cake

CHOCOLATE MARBLE CAKE

This is very basic cake recipe, very easy to make& tasty.

In this recipe you have to make a basic batter for cake & then divide in to 2 parts

Self raising flour 180 gm( 11/2 cup)
Butter 180 gm( softened)
Sugar 180 gms
Egg 180 gms(~3 eggs)

( all the main ingredients same amount)

Vanilla essence 1 tsp
Milk 3 tbs

Beat the butter & sugar nicely , then add eggs one by one and mix well.then add vanilla essence & milk , finally add the flour , mix until just combine. ( don’t over mix once you add the flour)
Now your basic batter is ready.
Divide into 2, in one portion add 3-4 Tbs cocoa powder& mix.

Now take a greased pan , put this batter alternately. The final part take a skewer & swirl round few times.

Bake this in 180 degree c preheated oven for 40-45 mts or until it’s done. ( each oven is different, so check before you take it out from the oven). Allow to cool in a wire rack & enjoy.

Ghee Rice

Another simple and easy delicious rice recipe,

Neychoru or Ghee rice ( cooker method)

Basmati rice 2cups
Ghee 6-8 tbs
Onion 1 (medium, sliced)
Boiling Water 3 1/2 cups
Cardamom 4
Cinnamon stick 1 inch
Cloves /Grambu : 4 nos
Bay Leaves 2
Pepper Corns few
Cumin Seeds a pinch
Salt to taste
Raisins
Cashews

Wash & sock the rice for 30 mts, drain the water completely & keep it aside & allow to dry properly

Heat some ghee in a cooker fry the cashews , then raisins , then onion until golden brown and keep it aside. Now add bit more ghee if you need it , then add all the spices and fry for few mts, now add the drained rice, fry for 4-5 mts , stir continuously, then add the boiling water & salt to taste. cover the cooker with a lid, ( don’t put the weight on)cook until the rice is done and all the water is absorbed.
Occasionally check the rice in between.

Switch of the flame & garnish with onion, raisins & cashews.
Serve with your curry. Try this & enjoy.

Doughnut (aka – Donut)

Ingredients
1:-
4 cup flour
2 pinch salt
4 Tbs sugar
2:-
2 egg
90 gm butter melted
1 tsp vanilla essence
250 ml warm milk 2 sachet yeast
Highly recommend a stand mixer with dough cook or really strong muscles. Mix all the number 2 ingredients and then add number 1 ingredients. Mix Throughly in stand mixer almost 8-10 mts. If you are using your hand knead thoroughly.( when you stretch your dough it won’t broken, need to stretch thinly , that’s the right dough for perfect donut.) once it’s ready, put it in a bowl and cover it and keep it in a warm place to double the dough. Then using a rolling pin & roll it into 1 inch thick. Then using 2 size round cutter 1 small & 1 big cutter and cut out the donuts. Again keep this in a sprayed baking sheet and keep it again in a warm place for another 10-20 mts. Then deep fry the donuts both sides. Decorate with chocolate or vanilla glaze or cinnamon mix & decorate with some sprinkles. Enjoy your doughnuts.
