Carrot Mushroom Thoran

This is a south indian style side dish, goes well with rice.

carrot grated 2
mushroom sliced 250 gms
onion sliced 1
green chilly
curry leaves
red whole chilly
garlic gloves 4-5 sliced
oil
mustard seeds
coconut shredded
turmeric powder 1/4 tsp

Heat oil in a pan, splutter the mustard , add red chilly,

then garlic, curry leaves, saute well ,

then add onion &green chilly, saute for few minutes,

then add mushroom & turmeric powder ,

cook until mushroom half done,

then add the carrot &coconut,

 

mix well, cook until its done. No need to cover the pan, saute in between.

Mushroom Crostini

This is a Italian starter

Sliced bread (French bread is preferable)
Softened butter or spread
Shredded Cheese

For Filling

Mushroom sliced 250 gms(I used button mushroom, you can use any type of mushroom for this recipe)
Capsicum sliced 1-2
Onion 1 big sliced
Garlic 4-5 cloves sliced
Bacon 4-5 sliced
Olive oil
Pepper powder

Heat little olive oil in a pan &cook bacon until its crispy, keep it aside,in the same pan heat little bit more olive oil add garlic and saute well. add onion saute for few minutes, then add capsicum and mix well. Now add the mushrooms & cook until its done. Add the cooked bacon and mix well,  sprinkle some pepper powder and keep it aside.

Pre-heat oven to 200degree


Spread butter on to the bread, put 1-2 teaspoon of filling on top of it.


Add some shredded cheese on top the filling

Bake for 8-10 mins.

Serve hot & enjoy:)

Hot Dog



If you are a sausage lover this is for you, sausages & fried onion goes well.

sauce (your favourite one)(I used honey mustard)

Heat little oil in a pan &pan fry the sausages, ones its done, fry the onion.

Take a bread slice ,put cooked sausage , then the fried onion & sauce. serve hot & enjoy.

Chicken Empanada

It’s a Spanish dish, which has resemblance to indian samosa

For Dough

3 cups flour
1/4 cup sugar
1/2 tsp baking powder
1/2 tsp salt
1 cup butter
1/3 cup cold water

combine all the dry ingredients in a bowl. Add the cold butter cubes in the mixture by rubbing it until it looks like coarse bread crumbs.
Gradually add the cold water, and knead until you form a soft and smooth dough ball. Chill in the refrigerator for at least half an hour
.
For filling:
1/2 kg skinless &boneless chicken cubed
1 medium sized onion, sliced
4 cloves garlic, minced
1 medium potato, diced
1 small carrot, diced
1 cup green peas
1/4 cup raisins
1/2 tsp salt
1/2 tsp pepper
cooking oil

( beaten egg 1 for egg wash)

heat the oil, and then sauté the garlic and onion.
Add the cubed chicken and cook until it turns brown.
Add the carrots and potatoes and cook for about 3 minutes. add little bit water or chicken stock if needed. let it simmer until the carrots and potatoes are tender.
Add the raisins and green peas and simmer for another 5 minutes. Season with salt and pepper.
Transfer to a bowl and make sure that it is drained of any liquid. Allow to cool for about half an hour.
With floured hands, press the dough on a floured surface. Use a rolling pin to flatten to about 1/8” thick, and cut it into circles.
Put about 1-2 teaspoons of the filling in the middle of the dough. Fold the dough to make the edges meet and form a half circle. Seal by pressing the edges with a fork.
Brush the crust with the egg wash.
Fry them in a saucepan at medium high. Constantly flip them to avoid burning or you can also bake them at 200° C (400° F) for about 20 to 25 minutes or until they turn light brown in a preheated oven.

Beef Cutlet

 

Beef 250 gms sliced (OR you can use mince beef, i prefer the beef, i feel its taste better)

1/4 tsp turmeric powder

chilly powder 1-2 tsp

salt to taste

Mix all these together&cook in a pressure cooker (3-4 whistles). Keep it aside until its cool down.

Then grind the beef coarsely &keep it aside.

potato 2-3

Cook the potato in boiling water until its done, peel off the skin &smash its nicely & keep it aside.

Next we can prepare the masala

Ingredients

onion sliced 1-2

curry leaves few

ginger sliced 1 1/2 tsp

garlic sliced 2 tsp

green chilly sliced 1-2

chilly powder (1-2 tsp)

turmeric powder 1/4 tsp

coriander powder 2 tsp

garam masala 1/2 tsp(if you are using meat masala you can put 1 tsp)

pepper powder

salt to taste

oil 11/2-2 tbs

Heat the oil in a nonstick pan , ginger &garlic, saute well then add onion ,salt, green chilly, curry leaves and saute until onion become translucent. Reduce the flame & add all the masala powders, mix well.

Now add the potato mix and beef mix into it , mix throughly, then switch off the flame &keep it aside until its touch to warm.

Make small balls &slightly press on your palm , make the cutlet desired shape.

In a bowl beat 2 egg nicely & get some bread crumbs in a plate.

Heat oil in a kadai, then dip the cutlet into egg mix and then into the bread crumbs, fry both sides until you get golden brown colour IN medium high heat. Serve hot with some tomato ketch up or sauce.

Enjoy the delicious spicy yummy beef cutlet.

DRAGON CHICKEN


Boneless skinless chicken 1/2 kg(slice into thin strips)

For marination

Dried red chilly 10-20 (make a paste& keep half for gravy)
ginger 1 inch
garlic 1 big bulb (both make paste& keep half for gravy) or you can use ginger garlic paste
egg 2
corn flour 2 tbls
maida 1 tbs
salt to taste
soy souse 2tsp

Mix all together and marinate the chicken &keep it aside atleast for half an hour

Then fry the chicken & keep it aside

Preparing the gravy

capsicum 2-3 different colours sliced into strips
onion 1 sliced
cashew whole few
red whole chilly few
chilly paste
ginger garlic paste
soy sause 2 tsp
sugar 1tsp
tomato sauce 11/2 tbs
spring onion for ˝garnishing
salt to taste

In a nonstick pan add some oil & fry cashew until its turns brown, then add whole red chilly, then the onion &capsicum. Once its half done add ginger garlic paste, saute well, now add the chilly paste &add other sauces, sugar &salt. saute well then add the fried chicken, mix well. Garnish with spring onion & serve hot. Enjoy your really yummy &tasty home made Dragon Chicken.
