Rainbow chiffon cake


Colourful Chiffon Cake(Rainbow Cake)

I made this beautiful colour cake for the father’s day. And i decorated it with the most trendy mirror glaze. i will post the mirror glaze recipe soon.

6 Egg
125 gm Sugar
4 tbsp Oil
60 ml Milk
½ tsp vanilla essence
110 gm Self-raising four
¼ tsp Cream of tartar

1 tsp Cocoa powder(for chocolate colour)
colours of your choice

1:-preheat the oven 170 degree
2:-prepare the tin
3:- separate the egg yolk &white
4:- beat egg white +cream of tartar+75 gm sugar until you get stiff peak form
5:- mix all other ingredients well
6:- combine white +yolk mix gently
7:- divide batter in to different bowl then your colour of choice
8:-add the batter into the prepared pan one by one
9:- bake for 35-45 minutes /until its done
10:- decorate /slice &enjoy:)

Carrot Cake

A very quick , easy, yummy cake.
No hard mixing, not much unfamiliar ingredient but still delicious. Very soft & fluffy . I made this cake within one hour.

I posted this recipe before ( courtesy tastemade) but I made some changes
Carrot peeled & sliced
Sugar 1 cup
Egg 3
Oil 3/4 cup
Vanilla essence 1 tsp
Baking soda 1/2 tsp
Self raising flour 2 cup
Sieve baking soda & flour & keep it aside
Add all other ingredients in a blender & blend together nicely
Then pour this mix into the flour , mix until well corporate.
Then pour into the prepared tin
Bake for 25-30 minutes / until it’s done in a 180 degree preheated oven.

Coconut Cake

I dont know how many people like coconut flavour. This is for coconut lovers. Its a moist yummy coconut cake. Try &enjoy if you are a coconut fan.
i made some changes &this is my version
egg whites 5
egg yolks 5
sugar 1 3/4 cup
butter 1/2 cup
oil 1/2 cup
flour 2 1/4 cup
baking powder 1 tsp
baking soda 1/2tsp
salt 1/4 tsp
buttermilk 1 cup
shredded coconut 2 cup
vanilla essence 1 tsp
slightly roast the coconut &keep it aside (not brown)
തേങ്ങാ ചെറുതായ് വറുത്തു മാറ്റി വയ്ക്കുക ബ്രൗൺ ആകാതെ നോക്കണം.
Add egg whites +1/4 cup sugar ,beat well until you get a stiff peaks form.
എന്നിട് മുട്ടയുടെ വെള്ളയും 1/ 4 കപ്പ് പഞ്ചസാരയും ചേർത്ത് നന്നായി അടിച്ചു പതപ്പിക്കുക.ഒരു കട്ടിയായ വെള്ള പത ആകുന്നത് വരെ .
mix flour,roasted coconut, salt, baking powder, soda well &keep it aside. (ഇനി മൈദയും ഉപ്പും ബേക്കിങ് പൗഡറും സോഡയും നന്നായി അരിച്ചെടുത്തു അതിലേക്കു തേങ്ങയും മിക്സ് ചെയ്തു മാറ്റി വെക്കുക.
now take butter, egg yolks, sugar ,oil and vanilla essence into a mixing bowl and mix well ,then add flour &buttermilk alternately &mix until just combine.
ഒരു മിക്സിങ്ങ് ബോളിൽ ബട്ടറും പഞ്ചസാരയും എണ്ണയും മുട്ടയുടെ മഞ്ഞയും എസ്സെൻസും ചേർത്ത് നന്നായി മിക്സ് ചെയ്യുക. അതിലേക്കു മിക്സ് ചെയ്തുവെച്ചിരിക്കുന്ന മൈദയും തൈരും കുറച്ചേ ആയി ചേർത്ത് പതിയെ മിക്സ് ചെയ്യുക.
now add the egg white mix & mix nicely.
ഇനി അടിച്ചു പതപ്പിച്ചു വച്ചിരിക്കുന്ന മുട്ട വെള്ളയും കുടി ആഡ് ചെയ്തു മിക്സ് ചെയ്യുക.
Pour it into the prepared tin &bake for 50-60 minutes in a preheated oven /until its done/toothpick comes out clean.
ഇനി ഇതു കേക്ക്ഓവനിൽ ടിന്നിലേക്കു മാറ്റി 160 ഡിഗ്രിയിൽ നേരത്തെ ചുടാക്കി വച്ച ഓവനിൽ 50 -60 മിനിറ്റ് ബേക്ക്/ കേക്ക് വേവുന്നത്‌ വരെ ചെയ്തെടുക്കുക .
എല്ലാവരും ഉണ്ടാക്കി നോക്കി എന്ജോയ് ചെയ്യുക .

ONION RING(super easy version)

A very easy & quick snack . It’s tasty & very crispy too

Onion ring

Onion 2 cut into rings

For batter

1 cup maida
1/4 cup rice flour
Salt to taste
Pepper powder
PapRika powder +cayenne powder( you can replace this with chilli powder)
Mix all this with water until you get thick batter

Dip ring onion into the batter & deep fry in the hot oil

Serve hot

Bread pori/ toast

You need

Bread cut into triangle

For batter

Maida 1 cup
Rice flour 1/4 cup ( optional)
Sugar ( optional)
Salt a pinch
Jeerakam/cumin 1/2 tsp
Sesame seeds 1 tsp( optional)

Mix all with water & make a thick batter

Dip each piece of bread in to the batter & deep fry until it’s done.

Serve hot

Fruit Popsicle

Very simple, healthy , delicious&chilling.

you need

1 cup blueberry frozen/fresh

1 banana frozen/fresh

sugar/ honey optional


Blend all together make a juice.

Pour it into the popsicle mould

Freeze for 2-4 minutes

You are done


Chicken Puttu



Its a modern version of common south indian breakfast. its usually made with rice flour & fresh shredded coconut.

i used my chicken thoran as a filling instead of plain coconut.

rice flour

salt to taste

warm water

mix rice flour &salt together , then add water little by little&mix well until you get nice moist , crumble mixture without no lumps. this is the right consistency to make soft puttu’.


in a puttu maker first add a thin layer of chicken thoran then the rice mixture then again the chicken thoran mixture on top & steam this for 5-6 minutes. your puttu’ is ready to serve. (Note: you can mix chicken thoran &rice mixture and steam for few minutes if you dont have puttu’ maker. thats also taste good.)

Serve hot & enjoy:)





Chicken Thoran

Its a very easy to make &tasty indian side dish. its goes well with plain rice.

For marination

boneless chicken 250 gms sliced in to very small pieces

lemon juice 2 tsp

turmeric powder 1/2 tsp

salt to taste

mix all the above together &keep it in the fridge for 1/2 hour

For thoran

Coconut shredded 1 cup

curry leaves few

onion 1 minced

ginger 1/2 inch minced

garlic 1 gloves minced

green chilly few

red whole chilly few

mustard seeds few

garam masala 1/4 tsp

oil 1 tbs

Heat a nonstick pan , add oil, splutter the mustard seeds, then add red whole chilly, then add ginger &garlic. Saute well then add onion, curry leaves, green chilly , saute until onion start to become translucent. Then add the marinated chicken pieces ,saute for a minutes then add the shredded coconut. Cook in low medium flame until the chicken become soft &cooked. No need to cover the pan, Need extra water, saute in between.

Serve hot with your rice.





Honey Banana Cupcake

Its a very soft fluffy yummy cupcake recipe. Very easy to make. Kids will love this.


Butter soft 120gms

Sugar 120gms

self raising flour 200 gms

Egg 2

Banana 2 smashed

Honey 3 tbs

Milk 4 tbs

Mix banana ,milk &honey well &keep it aside

Mix butter &sugar well until nice &fluffy

Then add egg one at a time , beat well

Then add flour & banana mix alternately & mix until its just combine(dont not overmix in this stage. using a spatula or wooden spoon is enough)

Bake for 15-20 minutes in 180 degree preheated oven.



Japanese Strawberry Sponge Cake

This is very soft & fluffy.

Self raising flour 150 gms
Corn flour 30 gms
Baking powder 1/4 tsp
Egg 6
Sugar 180 gms
Butter 40 gms
Milk 2 tbs
Vanilla essence 1 tsp
Strawberry essence 2 tsp
1:- heat butter & milk together ( in microwave) until butter melts& keep it aside
2:- mix egg & sugar in a heat proof bowl
3:- boil some water in a saucepan then put the egg sugar bowl on top of it & stir until all sugar dissolve ( don’t touch the bowl in the hot water, double boiling method)
4:- add essences then beat the egg mixture well until form a soft peak
5:- sieve the flours & baking powder 2-3 times ( it’s must)
6:- add 1/3 flour to the egg mix , fold it very gently using a spatula , continue this until the flour finish( don’t over mix)
7 :- finely add the butter milk mixture , fold gently until all incorporated.
8:- pour into the prepared pan( 8″ or 9″ )
9:- bake for 30-35 Mts in a 160 degree preheated oven or until skewer comes out clean.
10:- let it cool in the pan for 15 Mts & remove from the pan & decorate & Enjoy😋
(Note:- it’s a strawberry flavoured cake , so if you want to make pink add little bit pink colour , that makes more impressive.
The pan prepared with butter paper is better for this type of cake , better than butter / spray)
