Jam Biscuits

1 cup unsalted butter

1/2 cup sugar

3 cup plain flour

a small pinch salt

vanilla essence 1 tsp(optional)

your favourite jam

Mix butter & sugar well

Then add the flour &vanilla essence , mix well

Knead your dough well for few minutes until you get a smooth ball.

Cover it with a cling wrap &keep it in the fridge for atleast 15 mts.

Take out from the fridge &roll out your biscuits with your favourite cookie cutter.

Put the biscuit in a lines cookie tray.(if you feel your biscuits are too soft , put this tray in the fridge for another 5 mts in the fridge , then bake. especially if you are in a hot place)

Bake for 15-20 minutes in a 180 degree C preheated oven.

Once its cool down spread your favourite jam &make a sandwich

Stuffed Bun/Meat Bun/Dinner Bun

This is super easy, quick &very fluffy bun recipe. You can use this dough for any kind of buns like plain dinner buns, sweet buns or stuffed buns etc.. I used beef filling. if anyone interested in this filling recipe, feel free to ask. i will definitely post it soon.

For bun dough

21/2 cup flour

1 pkt yeast (8 gms)

1/2 cup milk

100 ml boiling water

1/4 cup vegetable oil

3-4 tbs sugar

1/2 tsp salt

Mix flour & yeast

then mix all the wet ingredients ( needs to be Luke warm) add sugar & salt . Mix well

then pour this mixture into the flour mixture & knead well. ( use a standing machine with dough hook on or use your strong muscles)

keep this in a bowl for at least 30 mts , double in size.

take out from the bowl , kneed again for another few mts.

Make small balls, spread this with rolling pin, put 1 tbs your favourite filling , roll again & keep this in a lined baking sheet. Allow to rise again for another 5-10  Mts.

optional:-Egg wash on top of the bread gives you nice brown colour. (  mix one egg & 1 tbs milk , brush it on top the buns)

Bake for 10-15 Mts in a 400 degree preheated oven.


Mushroom Crostini

This is a Italian starter

Sliced bread (French bread is preferable)
Softened butter or spread
Shredded Cheese

For Filling

Mushroom sliced 250 gms(I used button mushroom, you can use any type of mushroom for this recipe)
Capsicum sliced 1-2
Onion 1 big sliced
Garlic 4-5 cloves sliced
Bacon 4-5 sliced
Olive oil
Pepper powder

Heat little olive oil in a pan &cook bacon until its crispy, keep it aside,in the same pan heat little bit more olive oil add garlic and saute well. add onion saute for few minutes, then add capsicum and mix well. Now add the mushrooms & cook until its done. Add the cooked bacon and mix well,  sprinkle some pepper powder and keep it aside.

Pre-heat oven to 200degree

Spread butter on to the bread, put 1-2 teaspoon of filling on top of it.

Add some shredded cheese on top the filling

Bake for 8-10 mins.

Serve hot & enjoy:)

French Toast

Its a very popular breakfast recipe all over the world. Very easy to make ,very rich &healthy. This one got different variations. This is the basic version. Try this & Enjoy.

Bread 6 slices

egg 2

milk 1/2 cup

vanilla essence 1tsp (optional)

sugar 2-4 tsp(you adjust the sweetness according to your taste)(or you can replace it brown sugar ,honey,maple syrup etc)

cardamom powder 1/4 tsp (optional)

salt to taste (a pinch)

Beat the egg & sugar well then add the milk &other ingredients, mix well.

Now heat a non stick pan , splash some butter or oil then dip the bread into the egg mixture both sides & cook  the bread until golden in the heated pan.

Serve hot

The things you need

2 cup flour
1 tsp baking soda
1/2 tsp salt ( if you are using unsalted butter)
1 cup butter( in room tem)
1 egg( in room temp too)
1 tsp vanilla essence
1/4 – 1/2 orange or lemon zest( optional)
1 cup sugar
1/2- 3-4 cup strawberry jam
Mix butter & sugar
Add egg mix well then add zest & vanilla essence
Whisk flour+baking soda+ salt add this mixture to the butter mix

Line a square baking pan, add 3/4 of this mix to the pan and spread it with your hand or spoon evenly.
Then pour the jam over this and spread it.
Then rest of the mix put it on the top of the jam as shown in the pic below.
Bake this in a 375 degree F preheated oven for 25-30 mts until it’s done. Take out from the oven. Allow completely cool & cut it into slices & enjoy.

Hot Cross Buns

Maida or plain flour 2 1/2 cups
Wheat flour 11/2 cups
Sugar 1 Tbs
Dried yeast 1 sachets or 7 gm
Milk 300 ml warm
Cinnamon powder 1/4 -1/2 tsp
Egg 1
Salt 1/4 tsp
Raisins 11/2 cup

Mix milk & yeast together & keep it aside
Mix all other ingredients together except raisins, add milk mix and mix together then knead the dough for a good 5 – 8 mts ( like chapati)
Then keep this mixture in a bowl cover it with a tea towel for 2-4 mts in a warm place allow to double the dough. Then again knead the dough again with added raisins. Then cut this into equal 12 portions , put in a baking sheet , keep again in warm place for another 10-30 mts then bake this for 15-20 mts in a 180 degree preheated oven.

Note : how to make cross

100 gm plain flour mix it with water and pipe it over the bun before you bake

Glazing: beat one egg and brush over the bun before bake the bun or you can mix some warm milk & sugar together and brush it over the buns once you finish baking.

( ചെറു ചുടു പാലിൽ യീസ്റ്റ്‌ ചേർത്ത് മാറ്റി വയ്ക്കുക എന്നിട്ട് മൈദാ, ഗോതന്പ് മാവ്, കറുകപട്ട പൊടി , പഞ്ചസാര , ഉപ്പ് എന്നിവ നന്നായി യോജിപ്പിച്ച് പിന്നിട് മുട്ടയും ചേർത്ത മിക്സിൽ പാലും ചേർത്ത് നന്നായി ഒരു 5-8 മിനിറ്റ്സ് ചപ്പാത്തി കുഴക്കുന്നതു പോലെ കുഴക്കുക. അതിനു ശേഷം ബൌളിൽ മൂടി വച്ച് മാവു double ആകാൻ 2-3 മണിക്കൂർ വയ്ക്കുക , എന്നിട്ട് വീണ്ടും മാവു എടുത്തു ഉണക്ക മുന്തിരിയും ചേർത്ത് വീണ്ടും കുഴക്കുക. 12 equal കഷണങ്ങൾ ആയി മുറിച്ചു ഒരു tray യിൽ വച്ച് വീണ്ടും 10-15 mts വെയിറ്റ് ചെയയുക. (ക്രോസ് ഉണ്ടാക്കാൻ കുറച്ചു മൈദാ മാവു വെള്ളം ചേർത്ത് കുഴച്ചു ഇഡലി മാവു പരിവത്തിൽ ആക്കി കുരിശു വരക്കുക ) 180 ഡിഗ്രി preheat ചെയ്ത ഓവനിൽ 15-20 minutes bake ചെയയുക. ഇപ്പോൾ ഹോട്ട് ക്രോസ് ബണ്‍ റെഡി .

glazing കിട്ടാൻ ഒരു മുട്ട നന്നായി അടിച്ചു പതപ്പിച്ചു കുരിശു വരയ്ക്കുന്നതിനു മുൻപ് ഒരു ബ്രഷ് വച്ച് ബനിന്റെ മുകളിൽ തേക്കുക , എന്നിട്ട് bake ചെയയുക .)

Wholemeal Banana Bread


Wholemeal flour 2 cup
Baking soda 1 tsp
Salt a pinch
Mix together & keep aside
Butter 1/2 cup room temp
Brown sugar 3/4 cup
Egg 2
Banana 3 mashed well

Baking Method
Mix butter & sugar together well then add egg, mix well, then add the mashed banana , finally add the flour and gently mix, Pour this batter into a greased loaf pan and bake for 45 mts in a 175 c preheated oven or until it’s done. Take out from the oven , let it cool, then slice it and enjoy.
Note: for this recipe its not necessary to have a mixer, you can mix the batter with a wooden spoon or spatula.
