Carrot Cake

A very quick , easy, yummy cake.
No hard mixing, not much unfamiliar ingredient but still delicious. Very soft & fluffy . I made this cake within one hour.

I posted this recipe before ( courtesy tastemade) but I made some changes
Carrot peeled & sliced
Sugar 1 cup
Egg 3
Oil 3/4 cup
Vanilla essence 1 tsp
Baking soda 1/2 tsp
Self raising flour 2 cup
Sieve baking soda & flour & keep it aside
Add all other ingredients in a blender & blend together nicely
Then pour this mix into the flour , mix until well corporate.
Then pour into the prepared tin
Bake for 25-30 minutes / until it’s done in a 180 degree preheated oven.

Japanese Strawberry Sponge Cake

This is very soft & fluffy.

Self raising flour 150 gms
Corn flour 30 gms
Baking powder 1/4 tsp
Egg 6
Sugar 180 gms
Butter 40 gms
Milk 2 tbs
Vanilla essence 1 tsp
Strawberry essence 2 tsp
1:- heat butter & milk together ( in microwave) until butter melts& keep it aside
2:- mix egg & sugar in a heat proof bowl
3:- boil some water in a saucepan then put the egg sugar bowl on top of it & stir until all sugar dissolve ( don’t touch the bowl in the hot water, double boiling method)
4:- add essences then beat the egg mixture well until form a soft peak
5:- sieve the flours & baking powder 2-3 times ( it’s must)
6:- add 1/3 flour to the egg mix , fold it very gently using a spatula , continue this until the flour finish( don’t over mix)
7 :- finely add the butter milk mixture , fold gently until all incorporated.
8:- pour into the prepared pan( 8″ or 9″ )
9:- bake for 30-35 Mts in a 160 degree preheated oven or until skewer comes out clean.
10:- let it cool in the pan for 15 Mts & remove from the pan & decorate & Enjoy😋
(Note:- it’s a strawberry flavoured cake , so if you want to make pink add little bit pink colour , that makes more impressive.
The pan prepared with butter paper is better for this type of cake , better than butter / spray)
Try this , it’s easy & tasty.

Simple /American/Vanilla Buttercream (Piping consistency)

Unsalted butter 1 cup (room temperature highly recommended) (or use half unsalted &half salted butter ,skip adding extra salt)

icing sugar 31/2-4 cup

a pinch salt

vanilla essence 1 tsp

milk 1-2 tbs

hand mixer /stand mixer highly recommended(can use wooden spoon but needs strong muscles)

Beat butter for 4-5 minutes with a mixer on medium speed until the butter white &fluffy. Add 1 cups of powdered sugar at a time and turn your mixer on the lowest speed (so the sugar doesn’t blow everywhere) until the sugar has been incorporated with the butter(2-3 minutes). Once all sugar added increase mixer speed to medium/high and add vanilla extract, salt, and 1 tablespoons of milk and beat for 3-4 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.

(for me its take 15-18 minutes total)

Add colour of your choice &decorate your cake


Coffee Cake With Coffee Buttercream

If you are a coffee lover , this is for you.

For cake

1/3 cup unsalted butter, softened at room temperature

2  cups white granulated sugar

3 large eggs

1 1/2 teaspoons vanilla

1 ½ cups buttermilk

3 tablespoons instant coffee powder melted in 2 tbs water

3 cups self raising flour


Whisk together butter and sugar in mixer bowl. Add eggs and vanilla and whisk until smooth. In separate bowl, combine buttermilk and coffee. Whisk until smooth. In separate bowl, sift  flour. Add buttermilk and flour, alternating. Stir until no clumps remain. Dont overmix.Bake in 350 degree preheated oven for 45 minutes or until toothpick inserted into center of cake comes out clean.

For coffee buttercream

1 cup unsalted butter in room temperature

4-5 cups icing sugar

1 tsp vanilla essence

2-3 tbs instant strong coffee

Beat the butter until its light &fluffy about 5-8 mts . Add icing sugar 1 cup at a time ,beat for 1-2 minutes with each addition, then add vanilla essence &coffee (1 tbs at a time) beat until you get a fluffy buttercream.(total it will take 12-15 mts).



Lemon Cake

This is very moist &delicious cake

2 cup self raising flour

1¾ cup sugar

2-3tsp lemon rind

2 large eggs

1 cup vegetable oil

½ tsp salt

1 cup plain yoghurt

2 – 3 Tbsp lemon juice

Add the sugar, eggs and oil, then whisk together.

Add the salt, yoghurt and lemon juice and mix again.

Sift in the flour and fold in until just combined.

Pour cake mixture into prepared pan and bake in a 180 degree C preheated oven for 40-60 minutes or until the skewer comes out clean.

Fondant Peppa pig Figure

Peppa pig is a very famous cartoon character. Most of the kids love watching peppa. Make your kids favourite cartoon character for their birthday is a proud. check this out & try yourself. I am sure you can do it if i can.

what you need is

Colours (red, pink, black)
(if you need any additional info please ask, if i can i will definitely help.)

(i am not a professional , so this is my simple way, its not 100%)

peppa head. make a ball with pink fondant, then with your hand roll one side thinner, then the end of the thinner side just tap it into the bench. (until you get a desired shape, see pic)

peppa body a slightly bigger ball of red colour fondant , then roll slightly on oval shape, tap the bigger side into the bench.

peppas hands and legs roll thin 4 stripes of pink fondant, then for hands , slightly press one side of the strip, (see pic,) then cut 2 lines, then shape it into fingers. for legs attach 2 small oval shape black fondant to the strips.

now attach all together. for eyes 2 small white ball fondant , gently press with your finger, make a round,then 2 very small ball black & do the same. for nose make 2 intend with tooth pic (see pic) for ears, 2 small pink fondant , gently press with your fingers & make an oval shape for tail , small stripe of pink fondant, just make a loop for mouth , a small stripe dark pink fondant, make both ends slightly thinner, attach all small parts with little bit water , your peppa pig ready.
