Honey Banana Cupcake

Its a very soft fluffy yummy cupcake recipe. Very easy to make. Kids will love this.

 

Butter soft 120gms

Sugar 120gms

self raising flour 200 gms

Egg 2

Banana 2 smashed

Honey 3 tbs

Milk 4 tbs

Mix banana ,milk &honey well &keep it aside

Mix butter &sugar well until nice &fluffy

Then add egg one at a time , beat well

Then add flour & banana mix alternately & mix until its just combine(dont not overmix in this stage. using a spatula or wooden spoon is enough)

Bake for 15-20 minutes in 180 degree preheated oven.

Carrot Oats Raisins Muffins

This is vey delicious, super moist & yummy muffins. My kids are not very fond of eating veges. (like me 😦  )

But they love muffins, so i thought this way is amazing.

You can keep this for 5 days in an air tight container, & this is perfect snack for your kids lunch box.

2 cups self raising flour

1 cup  rolled oats

1/2tsp bicarbonate of soda

1/2tsp ground cinnamon

1/4 tsp ground nutmeg

3/4 cup light brown sugar

2 cup grated carrot (4-5 medium carrots)

2 large eggs

1/2tsp vanilla extract

1/2 cup  milk,

1/2 cup vegetable oil

1/2 cup raisins

Preheat oven to 180C/350F and line the muffin tin with paper cup.

Place the flour, oats, bicarb, spices and sugar into a large bowl and stir until combined.

Add in the grated carrot and raisins and stir until they are coated in flour.

Place eggs, vanilla extract, milk and vegetable oil into a jug and beat lightly.

Pour over the dry ingredients and mix until there are no lumps of flour left. Don’t overmix.

Fill the muffin cups 3/4.

Bake for 15-20 minutes,or an inserted skewer into the centre comes out clean.

Leave to cool in the tin for 10 minutes, before transferring to a wire rack to cool completely.

Red Velvet Cake

Red velvet cake and red velvet cupcakes have become increasingly popular nowadays.

This is very easy recipe , try at home impress yourself.

Ingredients you need,

1 cups all-purpose flour

1 cup self raising flour

1 teaspoon of baking soda

2 Tablespoons  cocoa powder

2 cups sugar

1 cup vegetable oil or canola

2 eggs

1 cup buttermilk

2 teaspoon of vanilla extract

1-2 oz. red food coloring, depends how deep you want the color

1 teaspoon of white distilled vinegar

½ cup of prepared plain hot coffee

METHOD

preheat your oven 325 degree F

Mix together all dry ingredients except sugar well (flour,cocoa powder, baking soda)& keep it aside.

Mix oil &sugar  well,  then add egg one at a time and beat nicely.

Then add vanilla essence, red colour, coffee & vinegar ,Mix well

Now add flour&buttermilk alternately to the wet ingredients, mix until just combine

Pour into a prepared pan

Bake for 40-50 mts in a 325 degree F preheated oven.

Remove the cake from the oven and let them cool

Then remove from the pan &let it cool completely.

  2. പൊടിയും സോടാപോടിയും കൊക്കോ പൊടിയും നന്നായി മിക്സ്‌ ചെയ്തു മാറ്റി വക്കുക
  3. പഞ്ചസാര ,എണ്ണ ഇവ വേറെ ഒരു പാത്രത്തിൽ നന്നായി അടിച്ചെടുക്കുക
  4. ഇതിലേക്കു ഓരോ മുട്ട ചേർത്ത് നന്നായ് അടിക്കുക
  5. എന്നിട്ട് കളർ ,വിനാഗിരി ,കാപ്പി ഇവ ചേർത്ത് ഇളക്കുക
  6. ഇനി നേരത്തെ മാറ്റി വച്ചിരിക്കുന്ന പൊടിyum buttermilkum mari mari ഇതിലേക്ക് ചേർത്ത് പതിയെ ഇളക്കുക
  7. ഈ മിക്സ്‌ പ്രിപയർ ചെയ്ത പാത്രത്തിൽ ഒഴിച്ച് 40-50 മിനിറ്റ് ഓവനിൽ കുക്ക് ചെയ്തു തണുപ്പിച്ചു വിളംബാവുന്നതാണ് .

Blueberry Muffins

This is very easy recipe , even kids can make this with little help from you. Try this recipe. My five year old girl done this. Loved it. It was truly amazing.

(In this recipe you dont really need a mixer, even you can just use your hands & a spatula or wooden spoon to mix. But make sure you mix butter, sugar , egg throughly, until its become creamy.)


Blueberry Muffins

Ingredients

self raising flour 2 cups
butter 125 gms
sugar 1 cup
egg 2
vanilla essence 1 tsp
blueberry 2 cups
milk 1/2 cup

Preheat oven 180 degree C

Add butter & then sugar, mix well, until its creamy.

Then add egg one at a time and mix well until its creamy & fluffy

Add vanilla essence , mix well.

Reduce the speed of the mixer, then add milk &flour alternately ,mix

until just combine. (do not over mix)

Then add blueberry , use a spatula or wooden spoon, mix it with the

batter.

Scoop this into the lined muffin tray

Bake for 15-20mts in a preheated oven.

Allow to cool

Vanilla Cupcakes/Cake

Ingredients

Self raising flour 2 1/4 cup
Sugar 1 1/3 cup
Butter 1/2 cup room temp
Egg 2
Vanilla essence 1 tsp( good quality)
Milk 1 cup ( room temp)

Mix flour & sugar then add butter mix well until it’s resembles crumbles, ( u can use your hand if you don’t have a mixer) then add your eggs, mix well then add vanilla essence and milk slowly, and mix until it’s combine well. Pour this into a prepared tin & bake for 30-40 mts in a 375 degree F preheated oven. Then take out from the oven once it’s done allow to cool in the pan for 10-15 mts , then take out from the pan & allow cool completely, enjoy. ( I doubled the recipe and made some cup cakes & a cake)

Oats Raisins Cookies

Ingredients

Butter 1 cup in room temperature

Brown sugar 1 cup
White sugar 1/2 cup
Egg 2 large room temp
Vanilla essence 1 tsp

Oats 3 cup
Plain flour 1 1/2 cup
Baking soda 1 tsp
Salt 1/4 tsp ( optional , if you are using salted butter, no need for extra salt)
Raisins 1 1/2 cup
Cinnamon powder 1 tsp ( optional)

Mix butter sugar well then add egg one by one , mix throughly , add vanilla essence ,baking soda, cinnamon powder , mix throughly, then add the flour, oats & raisins. Mix gently, until it’s just combine. Use 2 spoon or ice cream scoop , put it in a baking sheet with baking paper, ( see pic), bake for 15 mts or until the edges turn brown . If you cook more time you can get more crispier cookies. Take out from the oven and let it cool in a wire rack. You can keep this cookies in room temp for several day.

Lemon Cupcakes

Ingredients

Butter 150 gms( room temp or put it in the microwave for 20-30 sec)
Sugar 11/4 cup
Egg 3 ( room temp)
Vanilla essence 11/2 tsp
1 lemon zest
1/2 lemon juice (fresh)
Milk 175 ml
Self raising flour 2 cup

Beat butter & sugar until light & fluffy , then add egg one by one , mix well , then add the vanilla essence & lemon zest , mix throughly for another 3 mts. Then add 1 cup flour, 1/2 of the milk & 1/2 of the lemon juice , just mix then add another half of the flour , milk & lemon juice. Mix until just combine. In this stage don’t over mix the batter.
Pour spoonful of this mixture into each cupcake mold & bake this for 15-20 mts in a 375 degree F preheated oven. Once it’s done take out from the oven and allow to cool in s cooling rack. You can make 24 cupcakes with this recipe.
