Chicken Cutlet (Baked)

Cutlet is a very popular dish all over the world, but different style.

This is a combination of different version. Trust me its delicious.


potato 3 boiled,peeled &smashed

chicken boneless &skinless steamed &shredded

frozen veges 2 cup (cooked &slightly smashed)

onion 2 sliced

ginger garlic paste 1 tsp

green chilly few

turmeric powder 1/4 tsp

chilly powder 1 tsp (optional)

garam masala 1/2 tsp

coriander powder 1 tsp

oil 2 tbs

egg 2

bread crumbs

heat oil in a nonstick pan , add onion ,ginger garlic paste, green chilly , salt

saute until onion become translucent 

add all the masala(powders) mix well

add shredded chicken ,smashed veges & smashed potato, mix throughly &switch of the flame &keep it aside.

preheat the oven 180 degree C

line a baking dish with baking paper

Make small balls from the mix &gently press &flatten it

then dip into egg mixture, then coat with bread crumbs

bake for 20 mts , 10 mts each sides or until its become golden colour.

ഒരു പാനിൽ എണ്ണ ചുടാക്കി അതിലേക്കു ഇഞ്ചി വെളുത്തുള്ളി പേസ്റ്റ് , സവാള ,പച്ചമുളക് ഇവ ചേർത്ത് നന്നായി വഴറ്റുക . എന്നിട്ട് മസാലകൾ എല്ലാം ചേർത്ത് പച്ച രസം പോകുന്നത് വരെ ഇളക്കുക . ഇനി മാറ്റി വച്ചിരിക്കുന്ന ഉരുളകിഴങ്ങു പച്ചക്കറികൾ,ചിക്കൻ എന്നിവ ചേർത്ത് ഇളക്കി ചുടാറാൻ മാറ്റി വക്കുക .

ഇതു ചെറിയ ഉരുളകൾ ആക്കീ ഉരുട്ടി പരത്തി അടിച്ചു വച്ചിരിക്കുന്ന മുട്ടയിലും എന്നിട്ട് BREAD പൊടിയിലും പൊതിഞ്ഞു ഒരു ബേകിംഗ് ടിഷിൽ വച്ച് നേരത്തെ 180 ഡിഗ്രി ചുടാക്കി വച്ചിരിക്കുന്ന ഓവനിൽ 10 മിനിറ്റ് രണ്ടു സൈടും ബേക്കു ചെയ്യുക .

Frittata in a muffin tin


Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta


Egg 5-6

carrot grated 1-2

spinach sliced 1 bunch

garlic minced 3-4 cloves

mushroom sliced 11/2 cup

bacon 3 slices sliced

butter 40gms

pepper crushed

cheese parmesan cheese grated 1/2 cup

cheddar grated 1 cup

Beat the egg nicely & keep it aside

Heat butter in a pan, cook bacon until its almost done, then add the sliced mushroom cook until its done. then add grated carrot & spinach &crushed pepper, mix well,switch off the flame & keep it aside.

grease a 12 hole muffin tin, then put spoonful veg mix(if you like use paper cups)

then mix cheeses together , then add cheese on top of the vegs

then pour the egg mixture almost 3/4 off the muffin tin

Then bake this in a 200 degree preheated oven for 15-20 mts or until its done.

You can have this hot or cold. keep this for 3 days in the fridge or upto one month in the freezer.

Its a very healthy idea for the lunchbox for the kids or brunch for yourself.






Stir Fried Noodles

noodles 2 pkt

carrot 2 grated

beans few cut diagonally

capsicum thinly sliced (any colour)

garlic 3 cloves sliced

soya sauce 1 tbs

chilli sauce 1-2 tsp

oil 1 tbs

Cook noodles according to the packet instruction, drain the water, then run cold tap water over the noodles for 1-2 mts & keep it aside.

Heat oil in a nonstick pan ,add sliced  garlic & beans , then capsicum &carrot, cook until its done, then add the washed noodles , saute well until its well mixed with vegetables, then add the sauces, mix well.

Your stir fried noodles ready. Serve hot& ENJOY

Russian Potato Salad

potato 2-3 boiled,peeled & sliced

carrot 2 boiled,peeled & sliced

egg 3 hard boiled &sliced

peas 1 cup

onion 1 chopped

green capsicum 1 chopped

green onion few chopped

bologna or luncheon 3 chopped

crushed black pepper

mayonnaise 3 tbs

salt to taste

Mix all these together nicely, your yummy russian salad ready. You can prepare this ahead &keep it in the fridge.


Pickled Carrot

This is spicy tangy finger food. Very easy to make , you can make this well in advance.

Carrot peeled & sliced 8-10

Green Chilly 10-15

White vinegar 1 cup

water 1 cup

whole black pepper few

bay leaves 2-3

sugar 1 tbs

salt 1 tsp

In a saucepan, mix white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly. Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers.Refrigerate carrots 12 hours or overnight before serving.


Baked Bacon Pasta

pasta 250 gm
bacon 4-5 slice
butter 50 gms
crushed pepper
cheese 200gms
parmesan cheese for topping
boiling water 1 cup
bread crumbs &walnut or pasta for topping

Cook your favourite pasta according to the packet instruction.

heat some butter in a pan and cook sliced bacon,

then add 1 cup boiling water,

now add the 200gms cheese in to it make the sauce.

now mix the cooked pasta well with the sauce&crushed pepper.

transfer this mixture in to a greased baking dish

then topped with parmesan cheese,

then with the bread crumbs&nut mixture.

Bake for 20mts in a 180 degree preheated oven.


Mushroom Crostini

This is a Italian starter

Sliced bread (French bread is preferable)
Softened butter or spread
Shredded Cheese

For Filling

Mushroom sliced 250 gms(I used button mushroom, you can use any type of mushroom for this recipe)
Capsicum sliced 1-2
Onion 1 big sliced
Garlic 4-5 cloves sliced
Bacon 4-5 sliced
Olive oil
Pepper powder

Heat little olive oil in a pan &cook bacon until its crispy, keep it aside,in the same pan heat little bit more olive oil add garlic and saute well. add onion saute for few minutes, then add capsicum and mix well. Now add the mushrooms & cook until its done. Add the cooked bacon and mix well,  sprinkle some pepper powder and keep it aside.

Pre-heat oven to 200degree

Spread butter on to the bread, put 1-2 teaspoon of filling on top of it.

Add some shredded cheese on top the filling

Bake for 8-10 mins.

Serve hot & enjoy:)
