Pressure Cooker Vanilla Cake


Maida 11/2 cup +
Baking powder 11/2 tsp+ 1/2 tsp baking soda+ a pinch of salt(sieve twice & keep it aside)
Sugar 1 cup(grounded)
Egg 1 beaten
Butter 1/2 cup ( in room temp)
Vanilla essence 1 tsp
Milk 1 cup

Batter prepration

Mix butter & sugar well , add beaten egg & vanilla, mix well, then add milk & flour alternately , and mix. ( don’t over mix the batter once added the flour)

Cooking steps 

Take a cooker , remove the washer & weight , put steamer plate inside the cooker upside down , on top of that put the cake tin then preheat the pressure cooker for 2 mts in high flame, then carefully pour the cake batter into the cake tin and close the pressure cooker. ( please do remember to take off the waspressure_cooker_cake_fullher & weight before closing the pressure cooker)
Then cook for 40 mts in slow flame, after 40 mts switch off the flame and wait for 10 mts , then open the cooker and check the cake it’s done. Then enjoy your yummy vanilla pressure cooker cake.

Note : no need any water inside the pressure cooker.

Mocha Chiffon Cake

1 cup plus 2 tablespoons sifted self raising flour


6 tablespoons white sugar for egg yolks

¼ cup corn/canola oil
4 egg yolks, from large eggs, at room temperature
6 tablespoons water*
2 teaspoons coffee powder*
½ teaspoon vanilla extract
4 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar for egg whites
*dissolve the coffee in a little boiling water, then top up to have a total of 6 tablespoons of water/coffee mixture.

1. Preheat oven to 175 degrees Celsius.
2. In a large bowl, combine {A} well. Add in {B}. Beat with electric mixer or by hand until smooth and well blended.
3. In a separate bowl, beat {C} on high speed until frothy. Gradually add in the sugar {D} and beat until stiff peaks are formed. Gradually and gently fold in egg whites into egg yolk mixture. Pour batter into an ungreased 8” round, 3” high pan.
4. Bake for about 55 minutes or until top springs back when lightly touched. Invert pan into wire rack immediately and cool completely.
5. To release cake from pan, carefully run a thin knife around sides of pan and invert cake onto a cake board.
6. Cut cake in half horizontally. Fill and frost with buttercream and decorate as desired.


Hot Cross Buns

Maida or plain flour 2 1/2 cups
Wheat flour 11/2 cups
Sugar 1 Tbs
Dried yeast 1 sachets or 7 gm
Milk 300 ml warm
Cinnamon powder 1/4 -1/2 tsp
Egg 1
Salt 1/4 tsp
Raisins 11/2 cup

Mix milk & yeast together & keep it aside
Mix all other ingredients together except raisins, add milk mix and mix together then knead the dough for a good 5 – 8 mts ( like chapati)
Then keep this mixture in a bowl cover it with a tea towel for 2-4 mts in a warm place allow to double the dough. Then again knead the dough again with added raisins. Then cut this into equal 12 portions , put in a baking sheet , keep again in warm place for another 10-30 mts then bake this for 15-20 mts in a 180 degree preheated oven.

Note : how to make cross

100 gm plain flour mix it with water and pipe it over the bun before you bake

Glazing: beat one egg and brush over the bun before bake the bun or you can mix some warm milk & sugar together and brush it over the buns once you finish baking.

( ചെറു ചുടു പാലിൽ യീസ്റ്റ്‌ ചേർത്ത് മാറ്റി വയ്ക്കുക എന്നിട്ട് മൈദാ, ഗോതന്പ് മാവ്, കറുകപട്ട പൊടി , പഞ്ചസാര , ഉപ്പ് എന്നിവ നന്നായി യോജിപ്പിച്ച് പിന്നിട് മുട്ടയും ചേർത്ത മിക്സിൽ പാലും ചേർത്ത് നന്നായി ഒരു 5-8 മിനിറ്റ്സ് ചപ്പാത്തി കുഴക്കുന്നതു പോലെ കുഴക്കുക. അതിനു ശേഷം ബൌളിൽ മൂടി വച്ച് മാവു double ആകാൻ 2-3 മണിക്കൂർ വയ്ക്കുക , എന്നിട്ട് വീണ്ടും മാവു എടുത്തു ഉണക്ക മുന്തിരിയും ചേർത്ത് വീണ്ടും കുഴക്കുക. 12 equal കഷണങ്ങൾ ആയി മുറിച്ചു ഒരു tray യിൽ വച്ച് വീണ്ടും 10-15 mts വെയിറ്റ് ചെയയുക. (ക്രോസ് ഉണ്ടാക്കാൻ കുറച്ചു മൈദാ മാവു വെള്ളം ചേർത്ത് കുഴച്ചു ഇഡലി മാവു പരിവത്തിൽ ആക്കി കുരിശു വരക്കുക ) 180 ഡിഗ്രി preheat ചെയ്ത ഓവനിൽ 15-20 minutes bake ചെയയുക. ഇപ്പോൾ ഹോട്ട് ക്രോസ് ബണ്‍ റെഡി .

Vanilla Cupcakes/Cake

Self raising flour 2 1/4 cup
Sugar 1 1/3 cup
Butter 1/2 cup room temp
Egg 2
Vanilla essence 1 tsp( good quality)
Milk 1 cup ( room temp)

Mix flour & sugar then add butter mix well until it’s resembles crumbles, ( u can use your hand if you don’t have a mixer) then add your eggs, mix well then add vanilla essence and milk slowly, and mix until it’s combine well. Pour this into a prepared tin & bake for 30-40 mts in a 375 degree F preheated oven. Then take out from the oven once it’s done allow to cool in the pan for 10-15 mts , then take out from the pan & allow cool completely, enjoy. ( I doubled the recipe and made some cup cakes & a cake)

Oats Raisins Cookies



Butter 1 cup in room temperature

Brown sugar 1 cup
White sugar 1/2 cup
Egg 2 large room temp
Vanilla essence 1 tsp

Oats 3 cup
Plain flour 1 1/2 cup
Baking soda 1 tsp
Salt 1/4 tsp ( optional , if you are using salted butter, no need for extra salt)
Raisins 1 1/2 cup
Cinnamon powder 1 tsp ( optional)

Mix butter sugar well then add egg one by one , mix throughly , add vanilla essence ,baking soda, cinnamon powder , mix throughly, then add the flour, oats & raisins. Mix gently, until it’s just combine. Use 2 spoon or ice cream scoop , put it in a baking sheet with baking paper, ( see pic), bake for 15 mts or until the edges turn brown . If you cook more time you can get more crispier cookies. Take out from the oven and let it cool in a wire rack. You can keep this cookies in room temp for several day.

Wholemeal Banana Bread


Wholemeal flour 2 cup
Baking soda 1 tsp
Salt a pinch
Mix together & keep aside
Butter 1/2 cup room temp
Brown sugar 3/4 cup
Egg 2
Banana 3 mashed well

Baking Method
Mix butter & sugar together well then add egg, mix well, then add the mashed banana , finally add the flour and gently mix, Pour this batter into a greased loaf pan and bake for 45 mts in a 175 c preheated oven or until it’s done. Take out from the oven , let it cool, then slice it and enjoy.
Note: for this recipe its not necessary to have a mixer, you can mix the batter with a wooden spoon or spatula.

Lemon Cupcakes

Butter 150 gms( room temp or put it in the microwave for 20-30 sec)
Sugar 11/4 cup
Egg 3 ( room temp)
Vanilla essence 11/2 tsp
1 lemon zest
1/2 lemon juice (fresh)
Milk 175 ml
Self raising flour 2 cup

Beat butter & sugar until light & fluffy , then add egg one by one , mix well , then add the vanilla essence & lemon zest , mix throughly for another 3 mts. Then add 1 cup flour, 1/2 of the milk & 1/2 of the lemon juice , just mix then add another half of the flour , milk & lemon juice. Mix until just combine. In this stage don’t over mix the batter.
Pour spoonful of this mixture into each cupcake mold & bake this for 15-20 mts in a 375 degree F preheated oven. Once it’s done take out from the oven and allow to cool in s cooling rack. You can make 24 cupcakes with this recipe.
