Chicken Puttu



Its a modern version of common south indian breakfast. its usually made with rice flour & fresh shredded coconut.

i used my chicken thoran as a filling instead of plain coconut.

rice flour

salt to taste

warm water

mix rice flour &salt together , then add water little by little&mix well until you get nice moist , crumble mixture without no lumps. this is the right consistency to make soft puttu’.


in a puttu maker first add a thin layer of chicken thoran then the rice mixture then again the chicken thoran mixture on top & steam this for 5-6 minutes. your puttu’ is ready to serve. (Note: you can mix chicken thoran &rice mixture and steam for few minutes if you dont have puttu’ maker. thats also taste good.)

Chicken Thoran

Its a very easy to make &tasty indian side dish. its goes well with plain rice.

For marination

boneless chicken 250 gms sliced in to very small pieces

lemon juice 2 tsp

turmeric powder 1/2 tsp

salt to taste

mix all the above together &keep it in the fridge for 1/2 hour

For thoran

Coconut shredded 1 cup

curry leaves few

onion 1 minced

ginger 1/2 inch minced

garlic 1 gloves minced

green chilly few

red whole chilly few

mustard seeds few

garam masala 1/4 tsp

oil 1 tbs

Heat a nonstick pan , add oil, splutter the mustard seeds, then add red whole chilly, then add ginger &garlic. Saute well then add onion, curry leaves, green chilly , saute until onion start to become translucent. Then add the marinated chicken pieces ,saute for a minutes then add the shredded coconut. Cook in low medium flame until the chicken become soft &cooked. No need to cover the pan, Need extra water, saute in between.

Serve hot with your rice.





Special Pepper Chicken

Its a special pepper chicken recipe, its spicy, but taste amazing. Worth trying for a change. its a good combination with plain white rice/chappati/porotta.

Boneless skinless chicken breast 500gms (slice small cubes)

For marination

Yogurt/curd 1/2 cup

Cornflour 2tsp

Salt to taste

Ginger garlic minced 1 tbs

Turmeric powder 1 tsp

Crushed pepper 2-3 tsp

Mix all these together well with chicken &keep it in the fridge for atleast 4 hour /overnight.

For pepper chicken

Onion 1 minced

Turmeric powder 1/4 tsp

Ginger garlic minced 2 tsp

Garam masala 1/2 tsp


Oil for frying 2 tbs

Heat oil in a pan , then fry the marinated chicken (dont overcook),keep it aside

Then the same pan add onion ,ginger garlic minced & salt to taste,

Cook until onion become translucent.

Then add fried chicken ,garam masala &crushed pepper , mix well until all masala coated well with chicken.

Serve hot.



Kung Pao Chicken


Kung Pao a very famous, classic Chinese dish. Slight sweet, spicy, sour in taste. Very delicious.


300 chicken breast, cut into chunks
3-4 large dried chillies
50g roasted peanuts
11/2 tbsp vegetable oil
2 spring onions, finely sliced

For Marinade
a pinch bicarbonate of soda
1 tsp cornflour
2 pinches of salt
2 tbsp water

For Sauce
1 ½ tsp ginger, minced
2 garlic cloves, minced
½ tsp peppercorns, ground (sichuan preferred)
1 tbsp sugar
pinch of salt
1 tsp dark soy sauce
1 ½ tbsp rice wine (or dry sherry)
½ tbsp balsamic vinegar mixed with ½ tbsp water
50ml water

1:-mix chicken with marinade &keep it in the fridge for 30 mts

2:-mix all sauce ingredients & keep it aside

3:-heat oil in a wok fry the red chilly, then the peanuts

4:-fry the marinated chicken in the same oil until both side turn slight brown &keep it aside

5:- again the pan add the sauce mix, bring to boil, then add chicken, peanuts &the fried chilly

6:- cook until all the water evaporate, chicken well coated with sauce.

7:-garnish with green onion

8:-serve hot




Chicken Cutlet (Baked)

Cutlet is a very popular dish all over the world, but different style.

This is a combination of different version. Trust me its delicious.


potato 3 boiled,peeled &smashed

chicken boneless &skinless steamed &shredded

frozen veges 2 cup (cooked &slightly smashed)

onion 2 sliced

ginger garlic paste 1 tsp

green chilly few

turmeric powder 1/4 tsp

chilly powder 1 tsp (optional)

garam masala 1/2 tsp

coriander powder 1 tsp

oil 2 tbs

egg 2

bread crumbs

heat oil in a nonstick pan , add onion ,ginger garlic paste, green chilly , salt

saute until onion become translucent 

add all the masala(powders) mix well

add shredded chicken ,smashed veges & smashed potato, mix throughly &switch of the flame &keep it aside.

preheat the oven 180 degree C

line a baking dish with baking paper

Make small balls from the mix &gently press &flatten it

then dip into egg mixture, then coat with bread crumbs

bake for 20 mts , 10 mts each sides or until its become golden colour.

ഒരു പാനിൽ എണ്ണ ചുടാക്കി അതിലേക്കു ഇഞ്ചി വെളുത്തുള്ളി പേസ്റ്റ് , സവാള ,പച്ചമുളക് ഇവ ചേർത്ത് നന്നായി വഴറ്റുക . എന്നിട്ട് മസാലകൾ എല്ലാം ചേർത്ത് പച്ച രസം പോകുന്നത് വരെ ഇളക്കുക . ഇനി മാറ്റി വച്ചിരിക്കുന്ന ഉരുളകിഴങ്ങു പച്ചക്കറികൾ,ചിക്കൻ എന്നിവ ചേർത്ത് ഇളക്കി ചുടാറാൻ മാറ്റി വക്കുക .

ഇതു ചെറിയ ഉരുളകൾ ആക്കീ ഉരുട്ടി പരത്തി അടിച്ചു വച്ചിരിക്കുന്ന മുട്ടയിലും എന്നിട്ട് BREAD പൊടിയിലും പൊതിഞ്ഞു ഒരു ബേകിംഗ് ടിഷിൽ വച്ച് നേരത്തെ 180 ഡിഗ്രി ചുടാക്കി വച്ചിരിക്കുന്ന ഓവനിൽ 10 മിനിറ്റ് രണ്ടു സൈടും ബേക്കു ചെയ്യുക .

നമ്മുടെ ചിക്കൻ CUTLET റെഡി. ചുടോടെ ഇഷ്ടപെട്ട സോസ് കൂട്ടി കഴിക്കുക.

Hawaiian Chicken Kabobs

1/2 kg boneless skinless chicken breast sliced into 1 inch pieces

For marination

1/2 cup pineapple juice

1cup soy sauce

1cup vegetable oil

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoons ginger powder

1 teaspoon dry mustard

1teaspoon pepper powder

Mix all the marination ingredients, bring to a boil.

Reduce heat and simmer for 5 minutes.

Pour over chicken.

Cover and chill for atleast 2 hours or you can prepare the day before.

For kabobs

Cherry tomatos

button mushrooms

pineapple 1 inch square pieces

green capsicum sliced

onion sliced

marinated chicken (take out from the marinade &keep the marinade aside)


Alternate chicken, pineapple, green pepper, mushrooms, onion and tomatoes on skewers.

Brush with left over marinade

Grill kabobs over hot coals 20 minutes or until chicken is done


Spicy Chicken bites

Boneless chicken 250 gms sliced

Turmeric powder 1/4tsp

Chilly powder 2 tsp

crushed pepper 1 tsp

Salt to taste

Mix these together &keep it in the fridge for atleast 30 mts (mandatory)

Heat 2 tbs oil in a non stick pan & fry the chicken, remove the chicken from the pan , fry sliced 1/2 green capsicum in the same oil . Serve hot.  You can serve this with rice or as a starter. Only few ingredients, but taste yummy.


Chicken Empanada

It’s a Spanish dish, which has resemblance to indian samosa

For Dough

3 cups flour
1/4 cup sugar
1/2 tsp baking powder
1/2 tsp salt
1 cup butter
1/3 cup cold water

combine all the dry ingredients in a bowl. Add the cold butter cubes in the mixture by rubbing it until it looks like coarse bread crumbs.
Gradually add the cold water, and knead until you form a soft and smooth dough ball. Chill in the refrigerator for at least half an hour
For filling:
1/2 kg skinless &boneless chicken cubed
1 medium sized onion, sliced
4 cloves garlic, minced
1 medium potato, diced
1 small carrot, diced
1 cup green peas
1/4 cup raisins
1/2 tsp salt
1/2 tsp pepper
cooking oil

( beaten egg 1 for egg wash)

heat the oil, and then sauté the garlic and onion.
Add the cubed chicken and cook until it turns brown.
Add the carrots and potatoes and cook for about 3 minutes. add little bit water or chicken stock if needed. let it simmer until the carrots and potatoes are tender.
Add the raisins and green peas and simmer for another 5 minutes. Season with salt and pepper.
Transfer to a bowl and make sure that it is drained of any liquid. Allow to cool for about half an hour.
With floured hands, press the dough on a floured surface. Use a rolling pin to flatten to about 1/8” thick, and cut it into circles.
Put about 1-2 teaspoons of the filling in the middle of the dough. Fold the dough to make the edges meet and form a half circle. Seal by pressing the edges with a fork.
Brush the crust with the egg wash.
Fry them in a saucepan at medium high. Constantly flip them to avoid burning or you can also bake them at 200° C (400° F) for about 20 to 25 minutes or until they turn light brown in a preheated oven.


Boneless skinless chicken 1/2 kg(slice into thin strips)

For marination

Dried red chilly 10-20 (make a paste& keep half for gravy)
ginger 1 inch
garlic 1 big bulb (both make paste& keep half for gravy) or you can use ginger garlic paste
egg 2
corn flour 2 tbls
maida 1 tbs
salt to taste
soy souse 2tsp

Mix all together and marinate the chicken &keep it aside atleast for half an hour

Then fry the chicken & keep it aside

Preparing the gravy

capsicum 2-3 different colours sliced into strips
onion 1 sliced
cashew whole few
red whole chilly few
chilly paste
ginger garlic paste
soy sause 2 tsp
sugar 1tsp
tomato sauce 11/2 tbs
spring onion for ˝garnishing
salt to taste

In a nonstick pan add some oil & fry cashew until its turns brown, then add whole red chilly, then the onion &capsicum. Once its half done add ginger garlic paste, saute well, now add the chilly paste &add other sauces, sugar &salt. saute well then add the fried chicken, mix well. Garnish with spring onion & serve hot. Enjoy your really yummy &tasty home made Dragon Chicken.
