Fruit Popsicle

Very simple, healthy , delicious&chilling.

you need

1 cup blueberry frozen/fresh

1 banana frozen/fresh

sugar/ honey optional

water

Blend all together make a juice.

Pour it into the popsicle mould

Freeze for 2-4 minutes

You are done

Rainbow Fruit Jelly

Its a very easy dessert, can make this for kids birthday party or rainbow themed party.

jello 3 pkt(1 strawberry/ raspberry ,1 blueberry&1 lemon)mix according to the packet instruction &keep it aside to cool

Fruits sliced i used strawberry &blueberry

Small round/square bowls

1:_Fill the bowl 1/3 the red jelly & add strawberries& keep it in the fridge until the top thicken(u can put this in the freezer for 15 mts instead to speed up the process)

2:_Once its slightly set add the cold blueberry jelly mix very slowly to make the second layer &add your fresh fruits

3:_repeat the process again, after 15mts in the freezer add the 3 rd lemon jelly very carefully

4:_keep  this in the fridge until its completely set(preferred overnight)

Fruit Cake/Plum Cake(Alcoholic version)

This recipe is for one six inch round cake

1 cup self raising flour
1/2 cup chopped cashew nuts
1 cup mixed dry fruits (raisins, tutti fruiti,cherries)socked in the rum or wine at least for a week.
Oranges zest 2 tsp
1 + .5 cups white sugar
2/3 cup butter, at room temperature
3 eggs
1 clove + 1 cardamom pod + small piece of cinnamon + a pinch nutmeg (pound together to powder)
1 tsp vanilla essence
1/4 cup caramel syrup
3-4 Tbs wine or rum optional

Take out the dried fruits from wine and add enough flour to toss the fruits nicely & keep it aside
Pre-heat oven to 350F / 180C.

Mix the remaining flour and spices,

Beat the butter and 1 cup sugar until fluffy
Add vanilla and mix until combined.
Next, add 1 egg and beat. Then add a bit of the flour mixture and fold. Likewise, alternate between the eggs and flour mixture then
Add the cooled caramel and dredged fruits & orange zest and gently fold in. Pour batter into a greased cake pan and smooth the top.

Bake for 50-55 mins until it’s done or when a skewer inserted into the cake comes out clean.

Take out from the oven and add extra rum or wine on top while it’s hot ( this step is purely optional)
Dust with icing sugar when the cake is completely cooled.

Fruit Cake /Plum Cake(Non alcoholic Version)

Its a very famous cake in south india especially during christmas time. Very yummy ,rich &delicious.

Ingredients

1 cup plain flour
3 egg
1 1/2 cup sugar
3/4 cup butter ( in room temp)
Baking powder 1 tsp
Pinch of salt
Dried fruits 1 cup
Cashew nuts 1/4 cup (optional)
I tsp mixed spices (1 cardamom, pinch nutmeg, cinnamon, orange zest)
1 tsp vanilla essence
Golden syrup 1/4 to 1/2 cup
(Toss the dried fruit with 2 Tbs flour & keep it aside)
( sieve all dry ingredients flour, baking powder, spices, salt etc..keep aside)
Cream the butter & sugar until fluffy, then add egg one at a time & beat well
Add vanilla essence & golden syrup , mix well
Next add the flour, mix gently, finally add fruits, mix just combine. Don’t overmix.

Spoon mixture in to a greased pan. Bake for 45-60minutes or until cooked through in a 180 degree preheated oven.Remove from oven and transfer to a wire rack to cool completely.

Fresh Tropical Fruit Salad

You can any fruit of your choices

How I made is

2 kiwi fruit
1 banana
1 Apple
5 strawberry sliced into 4
Grapes green and black cut into half
1 orange

Slice all the fruits into almost same sizes
Add one lemon juice & 2 Tbs sugar( optional)
Mix nicely. Your yummy fresh fruit salad is ready. Enjoy.
