Hawaiian Chicken Kabobs

1/2 kg boneless skinless chicken breast sliced into 1 inch pieces

For marination

1/2 cup pineapple juice

1cup soy sauce

1cup vegetable oil

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoons ginger powder

1 teaspoon dry mustard

1teaspoon pepper powder

Mix all the marination ingredients, bring to a boil.

Reduce heat and simmer for 5 minutes.

Pour over chicken.

Cover and chill for atleast 2 hours or you can prepare the day before.

For kabobs

Cherry tomatos

button mushrooms

pineapple 1 inch square pieces

green capsicum sliced

onion sliced

marinated chicken (take out from the marinade &keep the marinade aside)


Alternate chicken, pineapple, green pepper, mushrooms, onion and tomatoes on skewers.

Brush with left over marinade

Grill kabobs over hot coals 20 minutes or until chicken is done
