Japanese Strawberry Sponge Cake

This is very soft & fluffy.

Ingredients
Self raising flour 150 gms
Corn flour 30 gms
Baking powder 1/4 tsp
Egg 6
Sugar 180 gms
Butter 40 gms
Milk 2 tbs
Vanilla essence 1 tsp
Strawberry essence 2 tsp
1:- heat butter & milk together ( in microwave) until butter melts& keep it aside
2:- mix egg & sugar in a heat proof bowl
3:- boil some water in a saucepan then put the egg sugar bowl on top of it & stir until all sugar dissolve ( don’t touch the bowl in the hot water, double boiling method)
4:- add essences then beat the egg mixture well until form a soft peak
5:- sieve the flours & baking powder 2-3 times ( it’s must)
6:- add 1/3 flour to the egg mix , fold it very gently using a spatula , continue this until the flour finish( don’t over mix)
7 :- finely add the butter milk mixture , fold gently until all incorporated.
8:- pour into the prepared pan( 8″ or 9″ )
9:- bake for 30-35 Mts in a 160 degree preheated oven or until skewer comes out clean.
10:- let it cool in the pan for 15 Mts & remove from the pan & decorate & Enjoy😋
(Note:- it’s a strawberry flavoured cake , so if you want to make pink add little bit pink colour , that makes more impressive.
The pan prepared with butter paper is better for this type of cake , better than butter / spray)

Tomato Wine

Hi friends,
I hope everyone had a good X’MAS. We had a nice one.
Did anyone tried tomato wine?
It was a hit in our X’mas party, so please try & enjoy.

Ingredients you need

Tomato 1 kg
Sugar 1 kg(you can adjust the sugar how sweet you want)
Warm water 11/2 L
Yeast 1 sachet (7gm) (wine yeast preferred)
Cinnamon stick 1
Can/bottle 5-7 L Capacity

(extra 1/2 cup sugar for caramelising for the golden colour)

Wash &dry your tomato &slice or smash it nicely
Add all other ingredients
Mix it well &close it nicely
Keep it in a cool dry place for 10 days
Stir everyday with a dry wooden spoon(atleast alternate days)
on 10 th day strain your wine
Caramelise your extra sugar , let it cool &add to your wine to get that golden colour(optional)

Bacon Cups

Its  very  delicious &healthy breakfast /bruch idea. Who love bacon &egg?its for you.

Bread 2 pieces

Streaky bacon 4

Grated cheese

Egg 2

Pepper crushed

Cut out the bread pieces using a round cutter according to the size of the bottom of your muffin tray.

Heat oil in a pan & cook bacon until half done

Spray your muffin tray , put the bread pieces first then add bacon , make a round around the sides of the muffin tray.

Add grated cheese , crack one egg on top of that, then sprinkle some pepper.

Bake for 15-20 minutes in a 200 degree preheated oven /until the eggs done.

Its yummy , worth trying.

Pavlova

I am so excited to share this recipe with you. This is a New Zealand special dessert, quite popular all over the world especially during Christmas. This is mainly a summer X’mas dessert. When we read the recipe feel easy but it can be tricky. Christmas is nearly here.
Please try. This is so yummy , delicious and tasty. Very spongy inside , crunchy outside, & sweet.
I am very pleased the way it came out.very proud , everybody really liked it.

PAVLOVA

6 x size 7 egg whites (at room temperature)
1 3/4 cup caster sugar
2 teaspoons cornflour
1 teaspoon vinegar
1 teaspoon vanilla extract or vanilla paste
1 tablespoon boiling water

Preheat oven to 110 C. Place egg whites in the bowl of a mixer (it’s very important bowl and whisk are perfectly clean). Whisk until soft peaks form when the beater is lifted from the mixture. Continue to mix, gradually add sugar at a tablespoon or so at a time and waiting between each addition, add cornflour with last of the sugar. It might take 5-6 minutes. Continue to mix another few more mts.Lastly add vinegar, vanilla and boiling water and allow to mix a minute more.
Using a pencil draw a circle on a piece of baking paper. Place the baking paper on a baking tray. Spoon the mix into the circle, smoothing the sides.
Place the tray in the oven and cook for 1 1/2 hours. Turn the oven off without opening the door and allow to cool for at least 2 hours more or overnight. Now your Pavlova is ready for garnish. You can use some whipping cream & fresh fruits to decorate. Enjoy.

( note: very imp: your kitchen utensil must be extra clean, no oil trace in the whisk or bowl. Use a tissue with few drops of vinegar to clean the bowl before use.

2: only use room temperature egg whites & be very careful not even a trace of egg yolk

3: Don’t open the oven door until it’s completely done , including the cooling down time. Around 4-6 hours
4: highly recommended to watch some videos in the you tube how to make perfect pavlova. )

Doughnut/Donut Buns

Plain flour 4 cups

dried active yeast 1 sachet (7gm)

caster sugar 3 tbs

butter, melted 50gm

egg 1

salt 1tsp

warm whole milk 1 cup(not hot or cold)

Method

Add yeast &sugar into milk &keep it aside for 5-10 mts

mix flour &salt in a large bowl

then add melted butter &egg into the milk mixture &mix well

make a well into the flour ,then pour the egg mixture &mix

now the fun part knead knead knead until you get a nice smooth dough 5-10 minutes(you can use mixer if you have one) if you feel the dough is too sticky add additional flour to the surface)

Place the dough into the bowl and cover with the tea towel, leave in a warm dry place foratleastt 45 minutes until doubled in size.

After 45 minutes ,punch down the dough,then remove the dough from the bowl, knead for another mt,

using a rolling pin , roll the dough 1 inch thick &cut out into round buns or use can simply make small balls.

leave this in a baking tray for another 15-30mts until its again double in size

then heat oil in a kadai (medium heat)fry each donuts both sides until its turns golden brown.

take some sugar in a bowl , coat each donuts with sugar while it warm.

once its warm down use a spoon or stick make a hole in the donut &fill your favourite filling. (jam or whipping cream etc)

Capsicum Cups

This recipe you can make different ways, colourful. Its really delicious &yummy. its perfect for a small party.  This is a vegetarian version. if you are looking for a non vegetarian version you can simply add some shredded chicken or mince beef or bacon … options are endless. Also you can cook this in nonstick pan in a cook top(if anyone interested in this fell free to ask). Try this & enjoy.

What you need is

Different colour capsicum(if its big cut it into half &remove the seeds, if its small cut the top &clean the seeds)

Now your cup ready

The filling

you can use any filling as you wish, here i am writing what i used

Onion 1 minced

green cabbage grated 1 cup

purple cabbage 1 cup grated

carrot 1-2 grated

salt to taste

pepper powder

oil 1 tbs

Heat oil in a non stick pan , add all veges & saute for few minutes (optional) , then fill the capsicum cups

or you can mix all the veges &fill the cup (its totally upto you)

Sprinkle some shredded cheddar cheese on top ,

or simply crack an egg on top of the cup with some cheese

Top it with some crushed pepper & salt

Bake for 15-20 mts or until the egg cooked well in a 180 degree C Preheated oven.

Serve hot with your favourite sauce

Kung Pao Chicken

 

Kung Pao a very famous, classic Chinese dish. Slight sweet, spicy, sour in taste. Very delicious.

Ingredients

300 chicken breast, cut into chunks
3-4 large dried chillies
50g roasted peanuts
11/2 tbsp vegetable oil
2 spring onions, finely sliced

For Marinade
a pinch bicarbonate of soda
1 tsp cornflour
2 pinches of salt
2 tbsp water

For Sauce
1 ½ tsp ginger, minced
2 garlic cloves, minced
½ tsp peppercorns, ground (sichuan preferred)
1 tbsp sugar
pinch of salt
1 tsp dark soy sauce
1 ½ tbsp rice wine (or dry sherry)
½ tbsp balsamic vinegar mixed with ½ tbsp water
50ml water

1:-mix chicken with marinade &keep it in the fridge for 30 mts

2:-mix all sauce ingredients & keep it aside

3:-heat oil in a wok fry the red chilly, then the peanuts

4:-fry the marinated chicken in the same oil until both side turn slight brown &keep it aside

5:- again the pan add the sauce mix, bring to boil, then add chicken, peanuts &the fried chilly

6:- cook until all the water evaporate, chicken well coated with sauce.

7:-garnish with green onion

8:-serve hot

Chicken Cutlet (Baked)

Cutlet is a very popular dish all over the world, but different style.

This is a combination of different version. Trust me its delicious.

Ingredients

potato 3 boiled,peeled &smashed

chicken boneless &skinless steamed &shredded

frozen veges 2 cup (cooked &slightly smashed)

onion 2 sliced

ginger garlic paste 1 tsp

green chilly few

turmeric powder 1/4 tsp

chilly powder 1 tsp (optional)

garam masala 1/2 tsp

coriander powder 1 tsp

oil 2 tbs

egg 2

bread crumbs

heat oil in a nonstick pan , add onion ,ginger garlic paste, green chilly , salt

saute until onion become translucent 

add all the masala(powders) mix well

add shredded chicken ,smashed veges & smashed potato, mix throughly &switch of the flame &keep it aside.

preheat the oven 180 degree C

line a baking dish with baking paper

Make small balls from the mix &gently press &flatten it

then dip into egg mixture, then coat with bread crumbs

bake for 20 mts , 10 mts each sides or until its become golden colour.

Enjoy this delicious healthy version of chicken cutlet.

ഇതു ചെറിയ ഉരുളകൾ ആക്കീ ഉരുട്ടി പരത്തി അടിച്ചു വച്ചിരിക്കുന്ന മുട്ടയിലും എന്നിട്ട് BREAD പൊടിയിലും പൊതിഞ്ഞു ഒരു ബേകിംഗ് ടിഷിൽ വച്ച് നേരത്തെ 180 ഡിഗ്രി ചുടാക്കി വച്ചിരിക്കുന്ന ഓവനിൽ 10 മിനിറ്റ് രണ്ടു സൈടും ബേക്കു ചെയ്യുക .

Frittata in a muffin tin

 

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta

Ingredients

Egg 5-6

carrot grated 1-2

spinach sliced 1 bunch

garlic minced 3-4 cloves

mushroom sliced 11/2 cup

bacon 3 slices sliced

butter 40gms

pepper crushed

cheese parmesan cheese grated 1/2 cup

cheddar grated 1 cup

Beat the egg nicely & keep it aside

Heat butter in a pan, cook bacon until its almost done, then add the sliced mushroom cook until its done. then add grated carrot & spinach &crushed pepper, mix well,switch off the flame & keep it aside.

grease a 12 hole muffin tin, then put spoonful veg mix(if you like use paper cups)

then mix cheeses together , then add cheese on top of the vegs

then pour the egg mixture almost 3/4 off the muffin tin

Then bake this in a 200 degree preheated oven for 15-20 mts or until its done.

You can have this hot or cold. keep this for 3 days in the fridge or upto one month in the freezer.

Its a very healthy idea for the lunchbox for the kids or brunch for yourself.

Stir Fried Noodles

noodles 2 pkt

carrot 2 grated

beans few cut diagonally

capsicum thinly sliced (any colour)

garlic 3 cloves sliced

soya sauce 1 tbs

chilli sauce 1-2 tsp

oil 1 tbs

Cook noodles according to the packet instruction, drain the water, then run cold tap water over the noodles for 1-2 mts & keep it aside.

Heat oil in a nonstick pan ,add sliced  garlic & beans , then capsicum &carrot, cook until its done, then add the washed noodles , saute well until its well mixed with vegetables, then add the sauces, mix well.

Your stir fried noodles ready. Serve hot& ENJOY
