Coffee Cake With Coffee Buttercream

If you are a coffee lover , this is for you.

For cake

1/3 cup unsalted butter, softened at room temperature

2  cups white granulated sugar

3 large eggs

1 1/2 teaspoons vanilla

1 ½ cups buttermilk

3 tablespoons instant coffee powder melted in 2 tbs water

3 cups self raising flour

 

Whisk together butter and sugar in mixer bowl. Add eggs and vanilla and whisk until smooth. In separate bowl, combine buttermilk and coffee. Whisk until smooth. In separate bowl, sift  flour. Add buttermilk and flour, alternating. Stir until no clumps remain. Dont overmix.Bake in 350 degree preheated oven for 45 minutes or until toothpick inserted into center of cake comes out clean.

For coffee buttercream

1 cup unsalted butter in room temperature

4-5 cups icing sugar

1 tsp vanilla essence

2-3 tbs instant strong coffee

Beat the butter until its light &fluffy about 5-8 mts . Add icing sugar 1 cup at a time ,beat for 1-2 minutes with each addition, then add vanilla essence &coffee (1 tbs at a time) beat until you get a fluffy buttercream.(total it will take 12-15 mts).

Green Chicken Curry

This a special chicken curry , spicy, smooth gravy like butter chicken, good combination with white rice/chappathi/naan.

boneless chicken 500gm cubed

onion sliced 2-3(white onion preferred)

curry leaves few

green chilly 5-6

ginger garlic paste 1 tbs

coriander powder 3 tsp

garam masala powder 1/2tsp

oil 11/2 tbs

salt to taste

Heat oil in a pan ,then add ginger garlic ,onion ,curry leaves ,salt to taste & saute well until onion become translucent.

Then add coriander powder &garam masala ,mix well&switch off the flame

Allow to cool little &then grind the mix with green chilly until you get a smooth paste

Heat this mix again the same pan ,then add the sliced chicken ,cook the chicken until the chicken soft & tender. (add little bit water if needed)

Rainbow Fruit Jelly

Its a very easy dessert, can make this for kids birthday party or rainbow themed party.

jello 3 pkt(1 strawberry/ raspberry ,1 blueberry&1 lemon)mix according to the packet instruction &keep it aside to cool

Fruits sliced i used strawberry &blueberry

Small round/square bowls

1:_Fill the bowl 1/3 the red jelly & add strawberries& keep it in the fridge until the top thicken(u can put this in the freezer for 15 mts instead to speed up the process)

2:_Once its slightly set add the cold blueberry jelly mix very slowly to make the second layer &add your fresh fruits

3:_repeat the process again, after 15mts in the freezer add the 3 rd lemon jelly very carefully

4:_keep  this in the fridge until its completely set(preferred overnight)

Prawns Biriyani

Biriyani is one of the famous dish all over india. Different types of biriyanis are there. Prawns biriyani is very delicious &yummy.

Ingredients

For rice:

basmati rice 2 cups

salt to taste

water 4 cups

cinnamon stick 1inch

cardomom 3-4

gloves 5-6

whole peppercorns few

Add all the ingredients (except salt) leave it for 30 mts,

then add salt &cook the rice until its done &keep it aside.

For marination:-

prawns cleaned & washed 1/2 kg

salt to taste

chilly powder 2-3 tsp

turmeric powder 1/2tsp

pepper powder 1 tsp

mix all together &keep it in the fridge for atleast 15 mts.

For biriyani

onion 3 sliced

curry leaves

ginger garlic paste 2 tsp

green chilly few

chilly powder 2-3 tsp(to your taste)

coriander powder 3 tsp

asafoetida a pinch

fenugreek 1/4 tsp

1:- heat 3 tbs oil in a pan and fry the marinated prawns &keep it aside

2:- use the same pan &oil (add extra oil if needed) add onion , ginger garlic paste, green chilly &curry leaves, saute until the onion become translucent.

3:- reduce the flame &add all the spice powders &saute well

4:- then add fried prawns &mix well until all masala coated well with prawns

5:-add this masala mix to the cooked rice & mix well ,

6:-garnish it with fried onion &coriander leaves

7:-put this in very low flame for 10 minutes

8:-serve hot with pickle/raita/salad

Love Letter/Madakku Dosa

This a very easy tea time snack. This brings my childhood memory.
 
For batter
 
Maida/plain flour 2 cup
salt to taste
egg 1
water
mix all together&make a batter (running consistency like pan cake/dosa)
 
for filling
shredded coconut 1-11/2 cup(fresh is better)(if you are not using fresh coconut add little bit water to mix these together)
sugar
cardamon powder a pinch
cumin 1/4 tsp
heat a non stick pan or dosa thava , pour 1 large spoon batter&make thin big round
once its half cooked , put the filling &fold it half. Then cook both side.
 
Yummy love letter/madakku dosa ready. Enjoy with a hot cup of tea.

Lemon Rice

LEMON RICE

Its a very popular rice recipe in India, delicious &very easy to make

 

cooked & cooled basmati rice 2 cups

oil 1tbs

mustard seeds 1/2 tsp

turmeric powder 1/2 tsp

curry leaves few

whole red chilly 2

green chilly 2

roasted peanuts few

roasted cashew nuts few

urad dhal 2 tsp

bengal gram 2 tsp

asafoetida a pinch

salt to taste

Lemon juice 2-3 tbs

Heat oil in a pan, add mustard seeds, urad dhal & bengal gram. let crackle the mustard & slightly brown the urad dhal & bengal gram.

Now add the red whole chilly ,green chilly &curry leaves. fry for few seconds, then add the turmeric powder &asafoetida,mix well.

Then add the rice ,lemon juice, salt,roasted peanuts&cashew nuts, mix well&switch off the flame.

Its ready to serve

Spicy Pork Fry(South Indian Style)

This is very authentic south indian style dish, i know many people doesnt like pork, i only like pork fry.
So this is how i make my pork fry, (i tried many times, but didnt get the way i wanted. now i got it right.)
Different people make this in different way.. this is my way of making perfect pork fry with a very few ingredients.

NADAN PORK FRY

Pork sliced 1 kg(curry pieces)
Ginger garlic paste 1 tbs(or 1 bulb garlic &1 inch ginger minced)
Curry leaves
Turmeric powder 1/2 tsp
Chilly powder 4-5 tsp(according to your taste)
Pepper powder 1 tsp
Salt to taste
Oil 2 tbs
Coconut pieces(optional)

Heat oil in a nonstick pan, add ginger garlic paste , saute well ,then add the coconut pieces if you are using, saute for a minute then add the sliced pork &salt to taste. Mix well until its all coated with oil.
Then add the turmeric powder & chilly powder ,&heaps of curry leaves. Saute well & put the lid/cover on &cook low medium heat for 30-45 minutes. Stir in between.
Add water if needed.(for me no need extra water, but different place , different types of pork meat, so adjust according to it).
Once the pork almost done remove the lid & add pepper powder , &saute until you get the perfect pork fry.

(Note: dont overcook the pork, dont add too much water if you are adding water. add extra oil if needed during frying time, adjust the chilly powder &pepper powder according to your taste)

Lemon Cake

This is very moist &delicious cake

2 cup self raising flour

1¾ cup sugar

2-3tsp lemon rind

2 large eggs

1 cup vegetable oil

½ tsp salt

1 cup plain yoghurt

2 – 3 Tbsp lemon juice

Add the sugar, eggs and oil, then whisk together.

Add the salt, yoghurt and lemon juice and mix again.

Sift in the flour and fold in until just combined.

Pour cake mixture into prepared pan and bake in a 180 degree C preheated oven for 40-60 minutes or until the skewer comes out clean.

What does a ‘serve’ look like?
While those in the dietician world think of this ‘serve’ measurement as intrinsic knowledge, lets break it down into layman’s terms.

A serve of vegetables:
½ cup of cooked green or orange vegetables
½ cup of cooked/canned beans, peas or lentils
1 cup of leafy, raw greens
½ cup sweet corn
½ medium potato
1 medium tomato

A serve of fruit:
1 medium apple, banana, orange or pear
2 small apricots, kiwi fruit or plums
1 cup of diced/canned fruit (no added sugar)
*Note – you can occasionally swap this for half a cup of fruit juice (no added sugar) or 30g of dried fruit

A serve of grains:
1 slice of bread

A serve of milk, yoghurt, cheese:
1 cup fresh milk, long-life milk, soy milk, rice milk
2 slices hard cheese
½ cup ricotta cheese
3/4 cup yogurt
